Fall Crop of Potatoes
You have found the problem with fall potatoes, no seed potatoes. We highly recommend purchased seed potatoes as they are higher quality and less disease prone. But what are you to do if not available.
Saving your freshly dug and replanting may not work because potatoes have some internal dormancy so that they do not sprout right after harvest.
I would go ahead and give it a try - have fun.
