I was curing my recent onion harvest (about 100 lbs.) in my yard while I was at work it started raining. What do I do? They're out in the rain. Do I start over and and hope they eventually dry out?

Keep them drying
I agree. Transfer them to a dry place and spread them out so they can fully dry. The window screen is a good idea to get air circulation around them. Check frequently and cull out any that are starting to go bad.

let them dry again and put
I assume you mean you pulled them and were letting them lay on the ground?
Just put them in a dry, out of the sun place like a garage or storage shed
I use old window screen to lay them on
mine are actually still outside under a tree and I will bring them in later and put them in my basement
check them every once and awhile for ones that might go bad - otherwise they start smelling
