Leave acorn squash on the vines until the skin has hardened so you can't scratch it with a thumbnail. The bottom of the squash will turn yellow and the vines will be dying back.
Immediately after harvesting, allow winter squash to further dry by storing them at 70-80 degrees in a dry location for 2-3 weeks before moving them to storage areas such as a basement where temperatures are 50-60o F. This "curing" process allows squash rind to toughen.
