Rose bloom time
It is fairly safe to plan for roses to have their first flush of spring blooms by the first week of June. Of course, you should hedge your bets at least one week on either side of that to take our unpredictable spring weather into account. I suggest you lean towards the second week of June instead of the end of May. You could improve your odds by asking the gardeners at the park to prune the roses 6-7 weeks before your wedding date. I don't know if they take special requests--but you could ask! Of course, you should also send a request to the weather department to make sure it doesn't rain that day...
